Fritters made with Green Peas and Mint

You’ve tried to make the perfect fritter but haven’t had much luck. This recipe has the perfect combination of taste and texture, all in one healthy bite. This recipe is perfect for a brunch, weekday lunch or anything in between. It’s easy to make and has fresh herbs and peas. Enjoy!

Ingredients:

Fritters

1 cup frozen peas thawed
Mint, 1/4 bunch, sliced
Half a cup of almond meal
1 scallion, sliced
2 organic free-range eggs
A pinch of sea salt unrefined and pepper
Extra virgin olive oil for cooking – 1 tablespoon

Serving:

Radishes, 1/2 bunch
1 medium cucumber, cut into ribbons
Two baby romaine (cos lettuce) heads, shredded
Mint, 1/4 bunch, chopped
1 cup baby spinach

simple vinaigrette:

Extra virgin olive oil
Juice 1 lemon
Apple cider vinegar
To taste, pinch of sea salt unrefined and pepper
Method:
Mix together the thawed frozen peas with the almond meal, scallion, and mint in a large bowl.
In a separate dish, whisk together the eggs with a pinch each of sea salt and black pepper.
Add the eggs to your dry mixture, and mix into a batter that resembles pancakes.
Pour 1 tablespoon of olive oil into a fryingpan set on medium-high heat. Pour 4 to 6 mounds of batter into the pan. Cook the fritters on both sides for 3 to 5 minutes, or until golden.
Serve two or three fritters along with the salad chopped of radishes and cucumbers, lettuce, spinach, mint and the simple vinaigrette.
For tomorrow’s lunch, store the remaining fritters and half the salad with dressing in an airtight container.
