Irresistible Zucchini Lasagne: Cashew Cheese Delight for Meat Enthusiasts (Dairy-Free, Gluten-Free Recipe)

This meatless zucchini lasagne has a lot of flavor, whether you are vegan or not!

Ingredients

Cashew Cheese

Cashews soaked over night: 1 cup
Lemon juice, 1 tbsp
2 tablespoons nutritional yeast
Sea salt
Pepper
Half a cup of filtered water

For Tomato Layer…

1/4 cup sun-dried tomatoes
1 cup cherry tomatoes
1 tbsp tomato paste
1 clove of garlic
1 tbsp of dried oregano
Salt & Pepper taste

To Layer…

Use a mandoline to thinly slice 5-6 zucchini.
3 cups baby spinach
Fresh basil leaves, 1 cup
1 cup cherry tomatoes, halved
Method
Add all ingredients to a high-speed food processor or blender and process until creamy.
Add all ingredients to the food processor and process until smooth.
Pre-heat oven to 350degF (18oC).
Lasagne is assembled by first creating a layer with zucchini strips, then adding a layer tomato sauce, cherry tomatoes halved, spinach, and cashew-cheese.
Repeat the process until you have used all of the ingredients. Finish with a layer cashew-cheese.
Bake for 30-40 mins, or until the top is golden brown and the zucchini layers are soft.
